CHEESE SCONE PIZZA

Serves 2-3
  • 250g (10oz) plain flour
  • 1tsp salt
  • 2tsp baking powder
  • 50g (2oz) butter – chopped
  • 75g (3oz) smooth mature cheddar cheese - grated
  • 2 eggs
  • 2-3tbsp milk ( if required)
 
TOPPING
  • 1 tbsp olive oil
  • 1 green pepper – de seeded and roughly chopped
  • 3 spring onions, washed and chopped
  • 2 tbsp tomato ketchup – mix together with the puree
  • 2 tbsp tomato puree
  • 6-8 cherry tomatoes – halved
  • 1 tbsp red jalepeno peppers, drained from a jar
  • 6-8 slices of pepperoni
  • 50-75g (2-3oz) grated  smooth mature cheddar
  1. Mix flour,salt and baking powder together in a bowl, add the butter and rub together until it re sembles fine breadcrumbs. Add the cheese and mix thoroughly. Stir in the eggs and milk and mix to form a soft dough.
  2. Roll out on a lightly floured surface to a circle approx 24cm in diameter. Place on a baking sheet.
  3. Heat the oil in a frying pan, then stir fry the peppers and onion until soft, add the pepperami and stir over a gentle heat for a couple of minutes.
  4. Spread the ketchup mixture over the pizza base, then spread the pepper mixture evenly over the top. Scatter the tomatoes and the grated cheese.
  5. Bake in the oven for 15 minutes until golden brown. Serve with a salad and coleslaw.
