CHEESEY POTATO CAKES WITH TOMATO SALSA

Serves 4
  • 250g (10oz) ready made mash potato
  • 75g (3oz) lighter mature cheddar cheese – grated.
  • 50g (2oz) self raising flour
  • ½-1 tsp smoked paprika
  • 1 large egg - beaten
  • Salt & ground black pepper
  • 1tbsp olive oil
 
SPICY SALSA
  • 1 beef tomato – seeds & skin removed and chopped
  • 2spring onions – washed and chopped.
  • 1 small lime – juice & zest
  • Drizzle of olive oil
  • 2 tbsp chopped fresh coriander
  • Salt & ground black pepper
  • 3-4 cm of chorizo sausages cut into chunks
 
  1. Place the mash into a bowl with the cheese, flour, paprika and egg and mix well, season with salt & pepper, then shape the mixture into 4 large patties, or 8 smaller patties.
  2. Heat the oil in a non stick frying pan and fry the potato cakes for 3-4 mins on each side, or until golden brown.
  3. Salsa – Gently fry the chorizo in a small frying pan until golden then place all the ingredients in a bowl and mix well.
  4. Serve the potato cakes with the salsa and a few rashers of streaky bacon or pancetta and enjoy.
