CRUNCHY COLOURFUL CHEESE SALAD

Perfect for BBQs or served with fish or chicken.

Serves 4
  • 2 large handfuls of baby spinach leaves – washed
  • 2 handfuls fresh podded peas
  • 1 handful mint leaves – finely sliced
  • 5-6 spears raw asparagus – remove woody ends and shave into ribbons using a potato peeler 
  • 1 red apple – cored and cut into chunks
  • 75g (3oz) Lighter extra mature cheddar – broken into chunks.
  • 1 bulb fennel – washed and finely sliced
  • 5-6 radish – washed and sliced
  • Juice of 1 lemon
  • Drizzle olive oil
 
Place all the salad ingredients onto a large serving plate and drizzle over the lemon juice and olive oil
