Choice Pepperoni
Crumpets
For a tasty, filling snack, toast some crumpets and top them with pesto sauce, tomato slices, chopped spring onion, pepperoni and grated Pilgrims Choice Cheddar. Grill until bubbling and you're in for a treat!
Serves 4 (2 crumpets each)
Ingredients
8 plain crumpets
8 tsp red or green pesto sauce
4 tomatoes, thinly sliced
4 spring onions, trimmed and finely chopped
50g (2oz) sliced pepperoni sausage
110g (4oz) Pilgrims Choice Cheddar, grated
Preheat the grill. Toast the crumpets, either under the grill or in a toaster.
Spread each crumpet with 1tsp of pesto sauce, then arrange the tomato slices on top. Share the chopped spring onions and pepperoni sausage between them, then sprinkle them with the grated cheese.
Grill the crumpets until the cheese melts and bubbles. Serve at once.
Cook's Tip
Use tomato puree instead of pesto sauce, if you prefer.
