Mini Choice and
Tomato Pitta Pizzas
Try this easy snack idea - it's perfect for a quick, light lunch and ideal for when the kids are hungry and you need to make something speedy and nutritious.

Serves 4 - suitable for vegetarians

Ingredients
4 wholemeal or white pitta breads
8 tsp regular or sun-dried tomato puree
4 medium tomatoes, slices
2 tsp dried Italian mixed herbs
110g (4oz) Pilgrims Choice Cheddar, thinly sliced.
Freshly ground black pepper
Basil leaves, to garnish (optional)


Method

Preheat the oven to 190ºC/fan oven 170ºC/Gas Mark 5.

Spread 2 tsp tomato puree over one side of each pitta bread. Arrange on a baking sheet and top with the sliced tomatoes. Sprinkle with the mixed herbs.

Arrange the sliced cheese on top, then transfer to the oven and bake for 10 minutes, until the cheese is melted and bubbling.

Serve seasoned with a little black pepper and scattered with a few basil leaves, if you like.

Cook's Tip
For an easy variation, omit the sliced tomatoes and scatter a small can of drained pineapple chunks in natural juice over the top of the pittas, then add 75g (3oz) of cooked ham, snipped into pieces. Arrange the sliced cheese on top and bake as above.
